I’m Ajeong, an ordinary Korean mom who works while taking care of my family’s three meals a day. Today, I wanted to make a delicious lunch for my son and husband, but I really didn’t feel like going grocery shopping.
So, I rummaged through my fridge and found some eggs and leftover vegetables from a previous meal. That’s when I decided to make omurice!
Omurice is a popular dish loved by people of all ages. It’s a simple yet nutritious and filling meal, making it a perfect choice for lunch. Here’s the omurice recipe that the three of us enjoyed today!
How to make Classic Omurice
Ingredients (Serves 1):
- 1 bowl of cooked rice
- 1/4 onion
- 1/4 carrot
- Some ham or bacon
- 2 eggs
- Ketchup
- A pinch of salt and pepper
- Cooking oil
Instructions:
- Finely chop the onion, carrot, and ham. (Even if you leave out one or two ingredients, it will still taste great!)
- Heat some cooking oil in a pan and stir-fry the onion, carrot, and ham. Add the cooked rice and stir-fry together.
- Season with salt and pepper.
- In a separate bowl, beat the eggs and season with a little salt.
- Heat cooking oil in a pan, pour in the egg mixture, and spread it thinly.
- When the egg is half-cooked, fold it in half. (Don’t stress about making it look perfect—just fold it roughly!)
- Place the folded egg on top of the fried rice and drizzle ketchup to taste.
